A big, nutritious salad will fill you up at lunchtime and demand that you give it sufficient time. You don't have to feel you have no alternative to a rushed sandwich.
MUM CARE

It is quite often the case that busy mums tend to snack and not sit down to eat proper meals. If this is your case, do try to control the habit.
First, make sure that you have in your refrigerator lots of healthy snacks not only for the children, but also for yourself. A few dried apricots or dried pineapple can be very tasty while also being healthy. Make a point of sitting down, even for ten minutes, while you eat your lunch. Make a huge mixed salad, with different kinds of lettuce, as well as cucumbers, thinly sliced carrots, and green beans. Add good vinaigrette with olive oil, vinegar, a little mustard and some chopped garlic.
Decorate the top of your salad with, say, raisins and toasted sesame seeds. Make your salad really large because not only will it have reduced calories compared to a hurried sandwich, but also it will be delicious and take you a lot of effort and time to eat.
So, eating it will also oblige you to take some time off and relax!
